A new cheese producer may be coming to the Sheboygan area.
Sheboygan’s City Plan Commission will meet this evening (June 9th), and one item on the agenda is a conditional use permit (CUP) submitted by Thumper and Bones LLC to operate Kickaas Creamery at 816 Michigan Avenue.
The use would be a small, artisanal cheese factory and storefront, employing three to ten people and welcoming an expected 50 to 60 customers each day.
The location is a former ice cream factory and was built out for dairy production, containing much of the necessary infrastructure to be a licensed cheese-making facility.
The current timeline for the project, if approved, would see the storefront open in approximately one year and the creamery operating roughly a year after that.
Above the facility are three two-bedroom living spaces, which would also be renovated and rented out as apartments, but not until upgrades are made to each unit.
Thumper and Bones LLC believe that the Kickaas Creamery and storefront would add to the walkability of the City and be a destination for locals and tourists alike.
If passed today by the Plan Commission, the CUP would move in front of the Common Council for full approval at a later date.
