A new restaurant, called Holla opened its’ doors to diners on Manitowoc’s near north side two weeks ago, tomorrow. Holla is short for Hollahan, the new owner’s last name. Seehafer News spoke recently with Myke & Shannon Hollahan at 603 York Street, near the Wisconsin Maritime Museum. Shannon tells us the building was owned by Red Arrow Products.
Myke on how they learned of the availability of the property for their farm to table eatery.
While the name is obviously a shortening of their last name, Shannon also says there is a second meaning behind it.
Shannon says the major source of their food is local farmers.
While buying locally sourced food is a positive for the local economy, Myke also says that as far as vegetables are concerned, it is a wise business model as well.
The Hollahans had a unique opportunity a couple of weekends ago, when they were able to make a meal for the farmers that raised the cow that was beiung served to them.
The Hollahan’s say their restaurant offers what they term “local fare, global flair”, with an international theme menu and recipes from around the world. Myke says they found out “something else about the building which had been used as a test kitchen by Red Arrow.”
